Stigma Journey
The Precision of Nature. Everything begins at 41°03'25.4"N. Since 2017, we have been cultivating our family groves in Xanthi with a focus on soil health and biodiversity. By nurturing a dominant 80% Koroneiki crop alongside our Megaritiki trees, we ensure the raw material carries the unique "stigma" of the Northern Greek microclimate.
The Critical Moment. Timing is a metric we never compromise. We practice early harvesting to capture the highest concentration of polyphenols and vibrant green aromas. Each olive is collected with care at the precise stage of ripeness, ensuring the chemical integrity that allows us to reach our signature 0.1 acidity.
Cold Pressed. Purely Extracted. Within hours of harvest, the olives enter the mill. We use strictly mechanical cold extraction methods, maintaining temperatures below 27°C. This technical precision ensures that the delicate antioxidants, vitamins, and flavor profiles are "locked" into the oil without any thermal degradation.
Freshly Bottled on Demand. The journey concludes when the oil is sealed. To ensure maximum freshness, we do not bulk-bottle; instead, we bottle each order within 24 hours of shipment. The result is a premium EVOO that leaves a lasting mark on your palate—a true sensory memory of the Thracian land.
